Ingredients:
1 jar of Dollee Hainanese Chicken Rice Paste 240g
1 pack Aroy-D Thai Jasmine Rice 1kg
1.8kg Chicken
1 bottle Chicken Chilli Sauce Glory 180g
2 tablespoons of Sesame oil
3 tablespoons of Soy sauce
Salt or coarse salt
Fresh ginger
Spring onions
Instructions:
For Chicken:
- Clean the chicken well inside and out. Pat it dry with paper towels.
- Remove the excess fat from the chicken and keep it aside for cooking the Hainanese rice.
- Rub the chicken with coarse salt or normal salt generously.
- Prepare a pot of water. Add in ginger slices and scallions. Keep the chicken into it and cover with water about 1 inch (2cm).
- Bring to boil over high heat then turn to lower heat and cover to simmer the chicken for 20 minutes.
- Remove chicken from the heat pot and transfer to an ice bath for 5 minutes for keeping the chicken skin springy. Pat dry the chicken with paper towels.
- Cut the chicken into slices or small pieces.
- Add 2 tablespoons of sesame oil and 3 tablespoons of soy sauce to the chicken. Optional to sprinkle some black pepper powder.
- Serve with Hainanese rice and Chicken Chilli Sauce Glory 180g as a dipping sauce.
For Hainanese Rice:
- Wash 750g (5 Cups) of Thai Jasmine Aroy-D Rice.
- Get 900ml of chicken stock (from the hot pot for cooking chicken).
- Mix the rice with a jar of Dollee Hainanese Chicken Rice Paste and 900ml chicken stock.
- Add in chicken fat and mix with the rice (Optional to skip this step).
- Cook the rice with a rice cooker. Stir it once when the rice starts boiling.
- Garnish the cooked rice with spring onions, serve hot with the chicken and enjoy!
