Prep Time: 20 mins / Cook Time: 40 mins / Serves: 4 to 6 persons 

 

Ingredients:

1 jar of Dollee Hainanese Chicken Rice Paste 240g

1 pack Aroy-D Thai Jasmine Rice 1kg

1.8kg Chicken

1 bottle Chicken Chilli Sauce Glory 180g

2 tablespoons of Sesame oil

3 tablespoons of Soy sauce

Salt or coarse salt

Fresh ginger

Spring onions

 

Instructions:

For Chicken:

  1. Clean the chicken well inside and out. Pat it dry with paper towels.
  2. Remove the excess fat from the chicken and keep it aside for cooking the Hainanese rice.
  3. Rub the chicken with coarse salt or normal salt generously.
  4. Prepare a pot of water. Add in ginger slices and scallions. Keep the chicken into it and cover with water about 1 inch (2cm).
  5. Bring to boil over high heat then turn to lower heat and cover to simmer the chicken for 20 minutes.
  6. Remove chicken from the heat pot and transfer to an ice bath for 5 minutes for keeping the chicken skin springy. Pat dry the chicken with paper towels.
  7. Cut the chicken into slices or small pieces.
  8. Add 2 tablespoons of sesame oil and 3 tablespoons of soy sauce to the chicken. Optional to sprinkle some black pepper powder.
  9. Serve with Hainanese rice and Chicken Chilli Sauce Glory 180g as a dipping sauce.

 For Hainanese Rice:

  1. Wash 750g (5 Cups) of Thai Jasmine Aroy-D Rice.
  2. Get 900ml of chicken stock (from the hot pot for cooking chicken).
  3. Mix the rice with a jar of Dollee Hainanese Chicken Rice Paste and 900ml chicken stock.
  4. Add in chicken fat and mix with the rice (Optional to skip this step).
  5. Cook the rice with a rice cooker. Stir it once when the rice starts boiling.
  6. Garnish the cooked rice with spring onions, serve hot with the chicken and enjoy!
