CHINESE FRIED RICE COMBO PACK & RECIPE

Prep Time: 15 mins / Cook Time: 10 mins / Serves: 2-4 persons
Rice Preparation Time: 30 minutes (if using fresh rice, let it cool before cooking)
Ingredients:
3 cups cooked jasmine rice (preferably overnight)
1 onion, diced
2 stalks of spring onion, sliced
3 garlic cloves, finely chopped
2 eggs, beaten
200g Tiger King Luncheon Meat, diced
3 Chinese sausages, thinly sliced
2 tbsp cooking oil
1 tbsp light soy sauce
½ tsp white pepper powder
½ tsp salt
Instructions:
- Rinse jasmine rice, drain, and cook according to packet directions.
- Heat 2 tablespoons of oil in a large wok or skillet over medium-high heat.
- Add the diced onions to the pan and stir-fry until translucent, about 2-3 minutes.
- Add the finely chopped garlic and continue to stir-fry for an additional 30 seconds until fragrant.
- Add the sliced Chinese sausages and diced Tiger King Luncheon Meat. Stir-fry until they start to brown and become slightly crispy, about 4-5 minutes.
- Push the sausage and luncheon meat mixture to one side of the pan. Pour the beaten eggs into the empty side of the pan. Allow them to cook for about 1 minute, then scramble with a spatula. Once cooked, mix the eggs into the sausage and meat mixture.
- Add the cooked jasmine rice to the pan. Break up any clumps with your spatula and mix everything together well.
- Add the light soy sauce, white pepper powder, and salt to the rice. Stir well to evenly distribute the seasoning.
- Stir in the sliced spring onions and cook for an additional 1-2 minutes, allowing the flavors to meld together.
- Taste the rice and adjust seasoning if needed. You can add a little more soy sauce or salt to taste.
- Remove from heat and transfer the fried rice to serving plates.

Tips:
- Overnight Rice: Using cold, day-old rice is ideal as it helps prevent the rice from becoming mushy.
- High Heat: Cooking on high heat helps to give the rice a nice, slightly crispy texture.
- Vegetables: Feel free to add vegetables like peas, carrots, or bell peppers if you have them on hand.
